Client Feature: Jamie Rifkin

 

Jamie came in for the first time to see Kelsey at Let Em Have It and we were inspired by her story of opening a local healthy food restaurant. We wanted to learn more about her and why she was passionate about opening The Green Collective Eatery 

 

 

 

 

 

 

What are you known for in the Denver community?

My sister and I are the founders and co-owners of The Green Collective Eatery. We are a fast casual health food restaurant in LoHi serving juice smoothies, smoothie bowls, salads, toasts, coffee, tea and more.

What inspired you to get into your passion?

Both my sister and I suffer from autoimmune thyroid disorders, that for a long time, left us feeling run down and crappy. We both became really interested in nutrition and how we could use our diets to help us feel better. Around that time my sister and I started having conversations about opening a health foods restaurant. For how health centric Denver is, we felt there was a lack of options in the space and nothing exactly what we had in mind! Shortly after, we got serious about opening a health forward eatery that wouldn't compromise taste, presentation, or dining experience.

What advice do you wish you could give your younger self?

Do what makes you happy and what you believe in. It really does't matter what other people think.

What kind of impact are you hoping to make in our world?

Through The Green Collective we are trying to make healthy eating accessible and enjoyable. We are also super passionate about sustainability ad protecting our environment. We source organic and local whenever possible and all of our to go wares are reusable or compostable. We also use our sweet potato scraps to make home made dog treats. We try to limit our impact as much as possible.

What are your hobbies?

I spend most of my free time training and performing aerial silks and straps! In the rare times I'm not doing that I like hiking, climbing, skiing, and chilling on the couch with my dog.

What are your favorite forms of self care?

Baths, massages, movie nights, and getting out in nature!

Where are you from?

I am one of of the few remaining Denver natives!

What is one of the greatest lessons you’ve learned in life?

You create your reality. Mindset is everything.
